Is a sufficiently long password unsafe just because it only consists of 2-3 letter long mixed-case dictionary words and numbers?

Entropy/Length/Complexity of a password is pretty straight forward and cant really vary much.

How is it possible that this spam mail came from Google Forms without revealing their sender address?

I got just this typical spam email, but this one seemed odd. It came from Google Forms, which apparently can send emails too, however you have to sign in to Google Forms to use it, and it uses the email you signed in with.
